Fortitude Bakehouse, a craft bakery, hidden away on a quiet mews in Bloomsbury and founded by Dee Rettali & Jorge Fernandez in 2018. Dee trained under French patissier Justin De Blank and has worked only with organic and naturally produced ingredients, founding Patisserie Organic in 1998 and later developing the sourdough cakes that built a following at Fernandez & Wells. Raised on a smallholding in North Cork, she has also spent years mastering Middle Eastern baking. Jorge managed Monmouth Coffee for six years and helped shape the UK's new wave coffee culture, with a reputation for sourcing from small artisan producers.
